Basil Ricotta Frittata

14 oz good quality tater tot. I prefer the Alexia brand (seriously) Crispy Seasoned Potato Puff: Garlic & Black Pepper. Prepare these according to package directions in oven.
1 T butter
8 Eggs
15 oz part skim Ricotta
8 oz grated Gruyere Cheese
½ teaspoon salt
½ teaspoon fresh black pepper
¾ cup thinly sliced fresh basil
1/3 c flour
¾ teaspoon baking powder

Preheat oven to 350 degrees.

Sautee butter in a heavy frying pan. I use one that is 10” diameter and has a nice size lip. It also works fine to butter the bottom of a similar sized baking dish. Arrange the tots along the bottom of the pan.

Whisk eggs. Incorporate Ricotta, Gruyere, salt, pepper and basil. Sift flour and baking powder on top and stir in. Pour this mixture on top of the tots.

Bake for approx. 50 minutes.
