Kale Pasta

Adapted from: Williams-Sonoma Healthy in a Hurry – Serves 4

Kale Pasta

Kale Pasta

Ingredients

Whole Wheat Linguini
Red Chard – 1 bunch
Lacinato Kale – 2 bunches
4 T Olive Oil
4 Garlic Cloves / peeled and smashed flat
1/4 t Red Pepper Flakes
Parmesan Cheese – 1/4 – 1/2 C
1/4 t Sea Salt
1 1/2 Lemons cut into wedges
1/3 C Toasted Pine Nuts

Preparation

  • Add pasta to large pot of salted boiling water. Cook until tender.
  • Remove leaves from chard and kale ribs. Stack leaves and fold or roll up and slice them thinly.
  • Heat 2 T olive oil in large frying pan. Add garlic and red pepper flakes and cook about 1 minute. Add greens to stir and coat evenly with oil. Cook until greens are tender (5min). Add a few tablespoons of pasta water to pan.
  • Drain pasta and return to warm pot add cooked greens, squeezed lemon juice from one lemon, parmesan, salt and remaining 2 T olive oil. Divide evenly among plates or bowls.
  • Sprinkle pine nuts on each serving. Serve remaining lemon wedges, extra parmesan and red pepper flakes on the side to taste.
